The Classic Strawberry Shortcake

On of the most iconic strawberry desserts is the classic strawberry shortcake. This timeless treat consists of tender, crumbly biscuits, luscious whipped cream, and juicy strawberries. Here’s a simple yet scrumptious recipe to satisfy your sweet tooth:

Ingredients:

  • 1 quart fresh strawberries
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2/3 cup whole milk
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Start by washing and hulling the strawberries. Slice them and sprinkle with 1/4 cup of granulated sugar. Set aside to macerate while preparing the other components of the dessert.
  2. Preheat the oven to 425°F (220°C).
  3. In a mixing bowl, combine the flour, 1/4 cup of granulated sugar, baking powder, and salt. Add the cold butter cubes and use a pastry cutter or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Gradually add the milk, stirring gently until the dough comes together. Be careful not to overmix.
  5. Turn the dough out onto a floured surface and knead it lightly. Pat it into a 1-inch thickness and cut out shortcakes using a round biscuit cutter.
  6. Place the shortcakes on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.
  7. While the shortcakes cool, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  8. To assemble, slice the shortcakes in half, spoon a generous amount of macerated strawberries onto the bottom half, and top with a dollop of whipped cream. Place the other half of the shortcake on top and serve.
